This salad recipe is perfect when you want something delicious and filling but is not too complicated or fussy. Plus, you know it’s healthy when it is naturally colourful, right?

The star ingredients in this salad are Purple cabbage, Blueberries and Tahini.

Purple Cabbage and other cruciferous vegetables contain a number of anti – cancer compounds that help break down cancer cells.

Blueberries contain powerful antioxidants and anthocyanins (pigments that give them the gorgeous blue colour) that have proven to reduce cognitive decline, support heart health and also helps make our vision better.

Tahini – Made from Sesame seeds are an excellent source of Copper and Manganese. They are also a good source of Calcium, Iron, Vitamin B1 and Zinc.

Now onto the recipe:


  • 2 handfuls baby spinach

  • 1 cup of chopped Purple cabbage

  • 1 small apple quartered

  • 1/2 cup of blueberries

  • 1 tbsp chopped parsley(optional)

  • A handful of chopped walnuts

  • For the dressing

  • 2 tbsp of Homemade Tahini( Recipe coming soon)

  • 1 tbsp Extra virgin Olive oil

  • 2 tbsp fresh lemon juice

  • Salt

  • Pepper


To make the dressing, place all the ingredients in a jar, close the lid and shake it vigorously until fully combined.

For the salad, place all the ingredients (except walnuts) in a large bowl. Pour the dressing over the salad and mix thoroughly.

Garnish with chopped walnuts and serve immediately.


This is a wonderful salad to pack for lunch. Make sure you pack the dressing separately.

Adjust the dressing to suit your taste.
