WIth the big game coming soon, I bet most of you are looking for easy, quick and (healthy) appetizers to munch on while watching the game. And since my goal here with Bright and Light Wellness is to make healthy living effortlessly easy for everyone, I present to you a deliciously crunchy, comforting Sweet Potato Chips with Creamy Avocado Yogurt Dip that is sure going to be a crowd-pleaser!!
Thinly sliced Sweet Potatoes tossed with aromatic spices and baked until nice and crisp served with a Creamy Avocado Yogurt Dip. It's a party for your tastebuds, without the feeling of guilt.
These Baked Sweet Potato Chips are similar to my Sweet potato Canapés except here the sweet potato slices are baked at a lower temperature until they are completely crisp and slightly golden brown along the edges.
Nutritionally, Sweet Potatoes are loaded with lots of vitamins and minerals, anti-oxidants and fiber that help you stay full longer. Avocados are a great source of healthy fats and the greek yogurt adds a wonderful protein punch to the dip.
I used my oven to bake the chips but this recipe can be made in the air-fryer as well.

BAKED SWEET POTATO CHIPS WITH CREAMY AVOCADO YOGURT DIP:
For the Chips:
Sweet Potatoes - 2
Olive Oil - 1 tbsp
Seasonings of your choice
For the dip:
Avocado: 1, ripe
Full fat greek yogurt - 1/2 cup
Garlic powder - 1 tsp
Fresh Parsley - 1 tbsp, chopped finely
Salt & Pepper - to taste
Pre-heat oven to 300F
Combine the sweet potato slices, olive oil and seasonings in a large mixing bowl and toss together until each slice is coated with the oil and spices.
Line a baking tray with parchment paper and place the slices evenly on the sheet. Make sure the slices are not overlapping each other.
Bake for 20-25 minutes, flipping them halfway through.
While the Sweet Potatoes bake, let's go ahead and make the dip:
Mash an avocado in a small bowl using a fork. Make sure it's nice and smooth,
Add the greek yogurt and whisk together to mix well.
Now add the garlic powder, parsley, salt & pepper and mix
That's it! Dip is ready!
Once the sweet potatoes start turning slightly golden brown, pull them out of the oven and allow them cool.
The chips are going to crisp up once they cool down.
Transfer into serving plate and enjoy with the dip
Oven temperature may vary. Keep an eye on the sweet potatoes and pull them out when you think they are ready,
Use seasonings of your choice. I used Trader Joe's Everything but Elote Seasoning. But the recipe tastes great with chaat masala, chili lime seasoning, tandoori seasoning, curry powder as well.
The dip tastes equally good with cilantro as well.
