Bell Pepper and Dill Salad

Light and refreshing, this 5 minute Bell Pepper and Dill Salad is an easy weeknight side!

I first tasted this salad at a summer potluck party and instantly fell in love with the vibrant colors and the refreshing taste. I tried recreating the recipe at home and it became an instant hit with my family. I've been making this recipe ever since.

This recipe has a short list of ingredients and is quick and easy to make. I used mini bell peppers but regular ones work just fine. Addition of dill takes this salad to a different level. Read about some of the health benefits of Dill here.


Servings: 2


  • Multi Colored Bell Peppers - 4, sliced thinly

  • Red onion - 1/4, sliced thinly

  • Fresh Dill - few springs - about 3tbsp, chopped finely

  • Cilantro - 1 tbsp, chopped finely (optional)

For the dressing:

  • Extra virgin olive oil - 1tbsp

  • Juice of half a lemon

  • Fresh garlic - 1 clove or Garlic salt - dash

  • Salt and pepper, to taste


  • Add the thinly sliced bell peppers and onions into a bowl along with chopped dill and cilantro and give it a good mix.

  • Combine all the ingredients for the dressing and give it a good whisk until we'll combined.

  • Pour the dressing over the salad and mix.

  • Taste test and adjust seasonings if required.

  • Allow the salad to sit for a few minutes for the favors to well combine.

  • Serve immediately or refrigerate until ready to serve


  • You can serve this salad on a bed of leafy greens to make it heartier.

  • Chopped cucumbers and Avocado can be added to make this salad more wholesome
