Berry Coconut Panna Cotta (Vegan and Dairy-free Delight)

Let's celebrate by making this delicious dessert - Berry Coconut Panna Cotta!! Panna Cotta is typically made with Whole milk, cream and eggs. But today I'm making a vegan version by using coconut cream. So, who’s ready to celebrate with me?
Coconut cream - 1 can
Blueberries and Blackberries - 1 cup
Juice of half a lime
Agar agar - 1 tbsp
Coconut Sugar - 4 tbsp (more, if you like it sweeter)
Vanilla extract - 1 tsp
Cardamom powder - 1/8 tsp
Coconut oil - 1tsp
Add the berries in a blender jar and purée until smooth
Strain the purée to remove seeds
Place a sauce pan on medium heat and add all the ingredients.
Whisk the ingredients until well combined.
Allow the mixture to come to a boil and then simmer for 2-3 minutes. Stir the mixture occasionally
When the agar agar has melted, remove the sauce pan from the heat and allow the mixture to cool down for a few minutes.
Pour the cooled mixture into greased ramekins and allow the mixture to come to room temperature.
Cover and refrigerate overnight.
When ready to serve, remove the ramekins from the fridge and dip it in hot water for a few seconds to loosen the Panna Cotta. You can also run a sharp knife along the edges of the ramekin to loosen it.
Invert the ramekins onto a plate and the Panna Cotta should easily pop out of the ramekin.
Decorate with fresh berries or berry sauce and enjoy this delicious and refreshing summer dessert!
You can make this recipe with Whole Milk or Cashew milk if you are not a fan of coconut milk.
You can use gelatin instead of agar agar
You can use honey or maple syrup instead of coconut sugar. Just adjust the sweetness to your liking.
Feel free to use seasonal fruits of your choice. Strawberries, pineapple and Mango are some great choices.
