Cauliflower Crust Pizza

This Cauliflower crust pizza recipe is delicious, gluten-free, grain-free and super easy to make. It is a great way to sneak in some vegetables, especially for those picky little eaters at home.

For this recipe, I've used riced cauliflower from Trader Joe's. But you can simply make your own by pulsing chunks of cauliflower in the food processor for a few seconds until finely ground.

Serves: 4


For the crust:

  • 1 1/2 packets of riced cauliflower

  • 2 eggs, beaten

  • 1/2 cup mozzarella shredded

  • 2 tbsp Parmesan grated

  • 1 tsp garlic salt

  • Italian seasoning, to taste

  • Salt and Pepper, to taste

For the topping:

  • Any store-bought pizza sauce or homemade pizza sauce

  • 1/2 cup mozzarella shredded

  • 3 tbsp parmesan grated

  • Toppings of your choice – I've used bell peppers, mushrooms, onions, and olives.


  • Preheat oven to 450F. Line a baking sheet with parchment paper and set aside.

  • Put the riced cauliflower in a large pan and sauté it without oil for 4-5 minutes until it becomes translucent. Let cool.

  • Once cool, place the cooked cauliflower in a clean kitchen towel, wrap it up, twist and squeeze the excess moisture out.

  • Transfer into a large bowl and add eggs, mozzarella, parmesan, garlic salt, Italian seasoning, salt, and pepper and give it a gentle mix.

  • Spread the mixture onto the prepared baking dish and pat well to form a thin crust.

  • Bake until golden brown on the edges, about 12-15 minutes.

  • Once done, gently remove the crust from the parchment paper and spray some olive oil on the baking sheet. Transfer the crust directly onto the baking sheet. DO NOT SKIP THIS STEP! This will make the crust extra crispy.

Top with pizza sauce, cheeses, and vegetables. Drizzle some olive oil on top to make the cheese golden brown. Place into the oven and bake for 7-10 minutes or until the cheese is nice and bubbly.

Serve pretty much immediately!


To make the crust without eggs – Mix 1 tsp ground flax seeds in 3 tsp water and let the mixture stand for 5 minutes to thicken. You can use this mixture in place of eggs.

Use any toppings/ seasonings of your choice.
