Fig Salad with Fresh Mozzarella
A gorgeous, bountiful salad that is the epitome of Summer!
Our body works at its best when it is in harmony with nature and y'all know how much I recommend and like incorporating local, fresh, seasonal ingredients. I love making this salad when fresh figs are in season.
Nutritionally, figs contain antioxidant, anticancer, antibacterial and anti fungal properties. They help boost immunity (which is something we all need right now) and are a good source of potassium, iron and dietary fiber. Dried figs have more nutrients than fresh ones. Fresh/ dried figs make for a quick and easy healthy snack.
A friend of mine brought us some fresh homegrown figs that were perfectly ripe and needed to be used up right away. And this salad is what came to my mind. It's something I make every year and this just looked like a great way to celebrate those insanely delicious figs.
For the salad:
Fresh figs - 3-4, quatered
Greens of your choice - 3 handfuls (I used baby kale and baby spinach)
Fresh Mozzarella (as needed) - Torn into pieces or chopped
Walnuts -3 tbsp, roughly chopped
Dried, sweetened cranberries - 3 tbsp
For the dressing:
Avocado oil - 2 tbsp
Balsamic glaze - 1 tbsp
Juice of half a lime
Honey - 1 tsp
Salt & pepper - to taste
Add all the greens into a large mixing bowl.
In a small mason jar, add all the dressing ingredients, close lid and shake rigorously until well-combined.
Add half the dressing on the greens and toss well to coat
Plate the greens on a salad bowl and top with figs, mozzarella, walnuts and cranberries.
Top with some more dressing, if required
Enjoy as is for lunch or for dinner with a side of grilled chicken or fish.
I highly recommend using balsamic glaze since it adds a really deep flavor to this salad. If glaze is not available, you can definitely use Balsamic vinegar.
