Honey Cardamom Ricotta Crostini & Pesto Ricotta Crostini

Crostini are delicious finger foods that are made with sliced bread that is brushed with olive oil and toasted to perfection.


Today I’m going to be sharing 2 different Crostini topping ideas that are healthy and delicious. The first one is my Honey Cardamom Ricotta Crostini topped with fresh strawberries and the second one is savory Pesto Ricotta Crostini that is topped with homemade Pesto and thinly sliced cucumbers.


HONEY CARDAMOM RICOTTA CROSTINI & PESTO RICOTTA CROSTINI


Ingredients:


1 large Baguette of your choice - I used sourdough


For the Honey Cardamom Ricotta Crostini:

  • Ricotta cheese - 1/4 cup

  • Honey - 2-3 tbsp

  • Cardamom powder - 2-3 pinch

  • Lemon zest - 1 tsp

  • Sliced Strawberries -2, thinly sliced

For the Pesto Ricotta Crostini:

  • Ricotta Cheese - 1/4 cup

  • Salt - 1/4 tsp

  • Black Pepper - to taste

  • Lemon zest - 1 tsp

  • Pesto - Recipe here

  • Persian cucumber - 1, thinly sliced.

Instructions:

  • Pre-heat the oven to 400F

  • Let’s start by slicing the baguette first. I’m using fresh sourdough baguette from a local bakery.

  • Start slicing the baguette in a bias about 1/4 “ thick. Using a good bread knife will make this step easier

  • Lay the slices on your cutting board and brush them with olive oil on one side. Flip them over and brush the other side with olive oil.

  • Transfer the slices on to a baking tray, lined with parchment paper and place it in the oven. Bake for 10-12 mins, flipping them half way through.

  • While the bread gets toasted, go ahead and prepare the toppings:

  • For the Honey Cardamom Ricotta topping: Add the Ricotta, honey, cardamom powder, lemon zest into a mixing bowl and mix everything together. Keep it aside.

  • To make the savory Ricotta topping: Add Ricotta cheese, salt, black pepper and lemon zest into a bowl . Mix everything and set aside.

  • Pull out the toasted crostini from the oven and all them to cool to room temperature. Once cool, start topping them.

  • Spread few crostini with the sweet ricotta mixture and top it with freshly sliced strawberries. Drizzle little bit of honey and top with a mint leaf.

  • Spread the rest of the crostini with an even layer of pesto. Spread the savory ricotta mixture on top of the pesto. Top with thinly sliced cucumbers and black pepper. Garnish with few freshly chopped mint leaves.

  • Enjoy with a glass of white wine or Rosé
