Kale and Brussels Sprouts Salad with Ginger Vinaigrette
Crisp & flavorful winter salad with fresh, seasonal ingredients
New Year is a time where a lot of us get on a 'detox' or 'cleanse' mode to get rid of the excess weight that may have accumulated during the holidays. A lot of people go on crazy diets in order to lose weight. While these diets may help you shed off some pounds, they may cause nutritional deficiencies which in turn may cause skin issues, gut issues and hormonal imbalances.
I'm a firm believer of eating mindfully and always eating in-season. Instead of starving yourself through these abstemious detoxes, I believe in fueling your body with real, wholesome and nutritious foods that help nourish your liver (the organ that helps detoxify the toxins in the body) to do it's job.

To get your started on the healthy eating bandwagon, I'm sharing this Kale and Brussels sprouts Salad with Ginger Vinaigrette that is not only nutrient-dense but also packed with lots of flavor. Use as a side salad oir Just add some protein like chickpeas or shredded chicken to make this into a wholesome meal.
Now, before you roll your eyes over raw Brussels sprouts, I suggest you first take a bite of this salad. The sprouts add a wonderful crunch and the combination of flavors and textures from the apples, pomegranates, parmesan and the spicy kick from the Ginger Vinaigrette dressing will have you craving for more. I promise, you are going to love it!!
Nutritionally, both Kale & Brussels sprouts are good sources of Vitamin K, a vitamin that is essential for blood clotting and bone health. They are both great sources of the antioxidant, kaempferol, a flavonoid that has powerful anti-inflammatory effects and Sulphoraphane, a compound that has been demonstrated to possess various anti-cancer mechanisms in cancer cells. Kale, Brussels sprouts and Apples are great sources of dietary fiber and help keep the digestive system in good condition. Healthy gut = healthy body!
For the salad:
Kale - 4-5 leaves, rinsed, dried and cut into ribbons
Brussels sprouts - 6, stemmed and shaved
Apple - 1 small, sliced thinly
Pomegranates - 2 tbsp or more
Cashews - 1/4 cup, lightly roasted
Parmesan - 2 tbsp, freshly grated (Optional)
For the dressing:
Extra Virgin Olive oil - 1 tbsp
Garlic -2 cloves, chopped or 1tsp garlic powder
Ginger - 1/2 tsp, freshly grated or 1/4 tsp ginger powder
Rice Vinegar - 1 tbsp
Dijon mustard - 1/2 tsp
Maple Syrup - 1 tbsp
Salt & Pepper - to taste
Combine the Kale, Brussels sprouts in a large mixing bowl. Add juice of half a lime and gently massage the kale and sprouts until the kale starts to soften and wilt, 2-3 minutes. Set aside while you make the dressing.
In a small mason jar, add all the ingredients for the dressing, close lid and shake vigorously to blend and emulsify the dressing.
Add chopped Apples & Pomegranates to the salad and pour the dressing over the salad and toss to coat. Garnish with cashews and freshly grated parmesan cheese.
You can replace the kale with other greens like baby spinach or arugula.
If Brussels sprouts are not available where you live, feel free to substitute it with green or purple cabbage
Parmesan cheese is completely optional but it does add a little something to this salad. You can replace the parmesan with unsweetened coconut flakes for a variation.
