Peach Lassi

Cooling, refreshing and insanely delicous yogurt-based drink that's perfect for hot , summer months!!



Lassi is a classic Indian drink made with fresh homemade full fat yogurt that is often enjoyed during hot summers. It can be made both sweet and salty, depending on your mood. The sweet version is often made plain with just yogurt and sugar or with fruits like Mangoes when fresh mangoes are in season.


I decided to give the classic Mango lassi a twist by switching the Mangoes with some fresh, sweet and juicy peaches from my friend's backyard for more of an in-season approach.


This Peach lassi is lighter than the typical Mango lassi and has a wonderful fragrance from the peaches. I've added mint for an extra burst of flavor.


Serve this luscious drink for breakfast, mid-afternoon snack or dessert on a warm day!

PEACH LASSI


Ingredients


  • Fresh, ripe peaches - 1 cup, chopped

  • Fresh mint - 3-4 leaves, add more if you like yours mintier

  • Plain, unsweetened yogurt - 1 cup

  • Plant-based milk - 1 cup

  • Honey - 1 tbsp

Instructions:


  • Combine the peaches, mint, yogurt, milk and honey in a blender and purée until smooth.

  • Pour into glasses and enjoy chilled.

Got leftovers? Pour into popsicle molds and freeze for a delicious and creamy frozen treat!!


PRAJ'S TIPS:


  • For a VEGAN VARIATION, use coconut yogurt or cashew yogurt instead of regular yogurt and substitute honey with maple syrup.

  • Use more mint leaves if you want a more minty flavor. I personally feel adding too much mint will mask the flavor of peaches.

  • Use any milk of your choice
