Rosemary and Garlic Roasted Potatoes

Roasted Potatoes tossed with aromatic herbs like Rosemary, is a classic combination we all love. Crispy on the outside and tender on the inside, these make for a delicious and nutritious side to any meal.
Potatoes often get a bad rap because of their high starch content, but they contain many other important nutrients and can be a very healthy addition to your diet.
Below are some of the amazing health benefits of Potatoes:
- They contain more potassium than bananas. Potassium is a mineral our body needs to work efficiently. It helps with muscle contraction and helps maintain an electrolyte balance in the body. For this reason, potatoes make for a good post-workout fuel and can help restore your energy levels after a very intense workout. Just watch out for the quantity you are eating as roasted potatoes can be highly addictive.
- Purple potatoes are rich in antioxidants called anthocyanins. They’re the same type of antioxidant found in blueberries and blackberries. Higher anthocyanin intake can help reduce the risk of certain cancers, heart disease and diabetes.
- Purple potatoes contain more fiber and can make you feel full longer. To increase the gut-friendly resistant starch in them, cook the potatoes and eat them at room temperature, without reheating them.
Nutrition aside, these roasted potatoes are so flavorful and taste absolutely delicious. I've used a combination of homegrown Purple and Red Potatoes in this recipe to level up the nutrients in this dish. You can simply roast them in the oven or use an air-fryer to crisp them up!
Purple and red potatoes - 4 cups, quartered, leaving skins on
Fresh Garlic - 2 tbsp, chopped
Fresh Rosemary - 1 tbsp, chopped
Everything but Elote Seasoning - to taste
Salt & Pepper - to taste
Good Olive Oil - 1-2 tbsp
Pre-heat oven to 425F. Line a baking sheet with parchment paper
In a large bowl, add the potatoes, garlic, rosemary, seasonings, olive oil and toss gently,
Transfer the potatoes and spread them on the baking sheet. Bake for 40-45 minutes, stirring every now and then, until the potatoes are golden brown.
Serve with protein of your choice and enjoy
Potatoes are starchy and can spike up your blood sugar levels, especially if you are diabetic. Always combine it with a good protein source and enjoy it in moderation.
