Spicy and Tangy Avocado Toast with Boiled Eggs
Hi guys, I've got a simple, healthy and nutritious recipe for y'all today. This avocado toast with boiled eggs can be prepared in just under 10 minutes with very few ingredients and has been a family favorite.
Avocados are a great source of vitamins C, E, K and other nutrients like folate, magnesium and potassium. They are also a great source of healthy fats. Fats are one the essential nutrients that our body needs. Healthy fats slow down the breakdown of carbohydrates there by, helping keep the blood sugar levels stable. Fats also help in the absorption of vitamins, minerals and other nutrients that are fat-soluble.
Eggs are a great source of protein. Research shows that having a protein-rich breakfast not only helps us feel satiated but also helps balance our mood and hormones throughout the day.
Science aside, I think Avocados and Eggs are a match made in heaven! To add some jazz to this classic recipe, I've used a secret ingredient (see below)
Now, let's get to the recipe, shall we?
1 small, ripe avocado
1 pasture-raised egg, boiled
1 slice Ezekiel bread
1 tsp mint-cilantro chutney, store-bought or homemade (recipe coming soon)
Salt and pepper, to taste
Hot Sauce - I used Nando's peri-peri sauce
1 tsp Parsley, chopped
Toast the bread lightly
Smear the mint-cilantro chutney generously on the toast.
Mash the avocado with a fork and spread it evenly on the chutney. Season this with salt and pepper.
Slice the egg and gently place it on top of the mashed avocado.
Season again with salt and pepper.
Drizzle the hot sauce/ peri-peri sauce over the eggs.
Garnish with chopped parsley.
Sit by a window and savor this toast with a nice cup of Chai. Bliss!
