Tandoori Spiced Broccoli Stir Fry
I hope this finds you well and safe! COVID-19 has turned our lives topsy turvy and life is anything but normal right now. But it is imperative now, more than ever to stay home and stay safe.
A couple of weeks ago, I posted a video on "Pandemic Pantry". I shared some healthy pantry essentials to stock up on for the shut down and I'm so happy to hear that so many of you found the post useful.
One of the essentials I mentioned was Broccoli. I know Broccoli is not a favorite among many because of it's bland taste and pungent smell. But it is one of the healthiest vegetables you can find. It is filled with powerful nutrients that are really important for our gut health.
I've got an amazing recipe for you today - Tandoori Spiced Broccoli Stir Fry. I think you are going to love this recipe. It's spicy, tangy and tastes amazing. My kids loved it and went for seconds. Now, that's a win in my opinion.
TANDOORI SPICED BROCCOLI STIR FRY
Broccoli florets - 2 cups
Ginger, grated - 1 tbsp
Turmeric - 1 tsp
Tandoori masala - 1 tbsp
Salt & pepper - to taste
Water - 2 tbsp
Lemon juice - 1 tbsp
Heat the olive oil in a pan on medium-low heat.
Once the oil is warm enough, add ginger and turmeric directly to the pan. Sauté until the spices are warm but be sure to not burn them
Now add the broccoli florets and give it a good mix. Add salt and pepper and mix again.
Add water, mix and cover with a lid.
Once the broccoli is half cooked, open lid and add tandoori masala and mix.
Close lid and allow the broccoli to cook.
Turn off stove, remove lid and drizzle some lemon juice and mix.
Serve as a snack or as a side dish. Tastes great as a side dish with roti/ rice or any meat dishes.
Do not overcook the broccoli. It should still have a bite to it. Overcooking also destroys some of the important nutrients in the broccoli.
Adding ginger in this recipe is important, not just for the taste but also for digestion. Ginger helps break down the fiber in broccoli so it can be digested easily.
