Watermelon, Cucumber & Mixed Greens Summer Salad

Perfect Summer Salad for hot, sunny days!!

A couple of days ago, I had posted a question on Instagram asking you guys what you'd like to see on my blog and bunch of you requested for Easy Summer Salads, so I created this salad keeping you in mind.


Everything in this salad screams Summer! The mix of sweet, juicy watermelon and pineapple with crunchy cucumbers and pumpkin seeds makes it look so vibrant and beautiful and not to mention, so incredibly healthy. It's packed with anti-oxidants, Vitamin C, healthy fats and minerals like Zinc that are essential for our immunity and great for healthy, glowing skin.


WATERMELON, CUCUMBER & MIXED GREENS SUMMER SALAD

Servings: 2


Ingredients:


For the salad:

  • Watermelon - 1 cup, cubed

  • Cucumber - 1 small, cubed

  • Pineapple - 1/2 cup, cubed (optional)

  • Fresh mint - 2 sprigs, chopped

  • Mixed greens - 2 cups mixed salad greens

  • Pumpkin Seeds - 1/4 cup


For the dressing:

  • Extra Virgin Olive Oil - 1 tbsp

  • Balsamic glaze or Balsamic vinegar - 2 tsp

  • Dash of lemon juice

  • Salt & Pepper - to taste

Instructions:

  • Add watermelon, pineapple, cucumber and salad greens to a large bowl and toss to combine. Alternately, layer on a large platter for serving.

  • Stir through the dressing ingredients until well combined and pour over the salad. Toss well before serving.

Serve it as a refreshing starter or a side salad at dinner!

PRAJ'S TIPS:


  • This is perfect salad to take for a picnic. Just carry the dressing separately and mix it with the salad just before serving.
